My husband is not a caramel fan. But once I started making this he quickly informed I can not make it too often because he likes it too much!!! I am not a chocolate fan, but I have dipped these in chocolate before and they are a big hit as well. But I love them plain...
Butter an 8 inch square pan (I have learned that if you butter tin foil and put it in the pan you can take the caramels out of the pan and store them wrapped in tin foil instead of having your pan used up until the caramels are gone).
in a sauce pan stir:
2 cups of sugar
1/2 cup margarine
3/4 cup light corn syrup
1 cup of cream ( you will need one more cup later, so a total of 2 cups)
Bring to a boil over Med heat. Stir CONSTANTLY
When it starts to boil stir in gradually one cup of cream (the 2nd cup of cream from the ingredients).
Turn heat down to Med. Low. Continue to stir occasionally as mixture thickens. Cook until a little dropped in cold water forms the ball you want. Pour mixture into buttered pan.
I will be sure to make a video of the ball in the water part so it is easier to understand!!!
